Noemi’s Bean Burrito

Our Founder Noemi’s personal recipe. This is a family favorite and we are excited to share it with you. A great meatless option packed full of flavor.

Burrito

 4 (10 inch) flour tortillas
 ¼ cup vegetable oil
 2 small onions, chopped
 2 (15 oz) cans black beans
 2 Serrano peppers, minced
 6 oz sour cream
 1 cup shredded cheese, cheddar or mozzarella

Blend black beans in blender.

Heat in oil on skillet over medium heat.

Place onion, Serrano pepper in skillet cook 2 minutes then add the black beans and cook for an additional 3 minutes.

To serve: Take one warm flour tortilla add beans, sour cream and cheese, spread down the center of tortillas, roll tortillas and they’re ready. Serve immediately with your favorite salsa.
